2 cans organic black beans, drained
1/2 c. chopped onions, bulbs,greens, flowers, whatever
1 large clove garlic, pressed
1/4 c. fresh cilantro & parsley -ratio to taste
3-4 ears of corn, blanched & scraped from cob
BIG handful cherry tomatoes, quartered
1 bell pepper, 1 hot pepper, 1 small cucumber,chopped fine
juice of 1/2 lemon or lime
big glug of olive oil
salt & pepper to taste
Mix everything & refrigerate an hour or so.
